My staple vegetables are radishes, cucumber, mixed greens (for salad), spinach, red cabbage, carrots, zucchini, lemon, ginger, strawberries and cherry/grape tomatoes. I’d say ween yourself into a raw vegan diet, really. I’m still working on making my diet increasingly more raw but honestly, I just wont give up LIGHTLY sauteed veggies. So delicious.
Important kitchen tools: juicer, blender, mandolin (so much easier when you’re constantly chopping vegetables) and a mixer. My advice is always make meals in advance. Once I get chopping, I just make several meals at once. I tend to steer away from raw when I’m feeling lazy. My new mandolin has made a big difference, though; it cuts the chopping time down a lot.
I’ve incorporated a lot of raw unsalted nuts/seeds into my diet to spice up salads and meal replacement bars I make. Sunflower seeds, pecans, pumpkin seeds, almonds, chia seeds, salba and walnuts are the best for you/my favourite.
